Why Gluten-Free
My daughter Alexandria has Celiac disease, she is the only one with gluten allergies on both sides of the family she was diagnosed
when she was 6yrs, just 3yrs after being diagnosed with type 1 diabetes. It was very difficult in the beginning and still proves to be a
challenge, not to many stores carry a variety of GF products and we have only found a couple that carry baked goods.

When she was diagnosed, her allergy was very sever she had been having seizures for almost a year, she had a catscan, ekg, mri
and a couple other test done, they always found nothing, they thought it was the way I administered her daily shots (5-7 a day), when
she went in to have her yearly blood work done we were notified that her blood work showed that she was high on the scale for
celiac antibodies (gluten intolerance) and needed to undergo a colonoscopy and endoscopy immediately, 1. Because it would let us
know for sure that she was gluten intolerant and 2. To make sure that no damage had been done to her digestive system.

We then meet with a dietitian who informed me that everything I was feeding my daughter was killing her. I went home with my new
list of not to do's and cleaned my house and kitchen everything had to go, cutting boards, wooden utensils, toaster and all my food
except the dairy, rice and a jar of unopened pasta sauce everything in my kitchen and medicine cabinet was contaminated. It took
me about a month to stop tearing every time I looked at her, I was so afraid to feed her anything and it took me days to memorize the
list of not's on the ingredient list on top of the hours it now took to go to the grocery store because I read every label.

Along with cleaning my house and telling my mother in-law how to clean hers and how to properly fix anything for Alex and notify the
school and daycare on the do's and dont's I thought I was going to bust. But by the end of the first year we were doing good, even
Alex had memorized the "important" ingredients to look for in her foods and to wear gloves when playing with playdough and not to
lick stamps or envelopes and not to share any food and to always place a napkin or paper towel under her food.

On a monthly basis we shop at 3 sometimes 4 different stores just for her needs; because, one store has the pizza crust and what
they call hamburger buns another has the bread (when its in stock), crackers, pasta, waffles and cereal, then we have the one that
carries all the special flours (rice, potato, etc.) plus the non gritty cookies.

I have tried on several occasions to have the stores order what it is that we need so that we can shop exclusively at their store, but
they want us to commit to purchasing so much of the product and I have to put in a "special" order every time we need it then wait.

These same stores dedicate either a single isle or put little gluten free tags throughout their store, which most times have been
moved to an incorrect location, they don't advertise their GF products nor do they offer us any "real" discounts

for the last couple of years I have been researching product and baking (thanks to family and friends we have a couple of winners!)
and now we are ready to offer you
fresh baked gluten free deserts.

how are things going?
Since 2005 Alex's levels are close to what the doctors deem "normal" she hasn't had a seizure since 2005. and she's even gained a
little weight and height and although she has a little neurological disorder (cognitive and short term memory) she is doing great.  
She loves the fact that "we" are opening a GF store so that kids and parents can shop at a store they can trust is there for their
benefit and that we understand your (our) needs.
